The rich flavour of mackerel is a natural in New Orleans' favourite comfort food.
Cook time: 35 minutes
2 tablespoons butter
1/2 cup sliced celery
1/2 cup chopped bell pepper
1/2 teaspoon minced fresh garlic
1 1/4 cups water
1 (5 oz) box yellow rice mix (gluten free)
1/4 cup tomato sauce
1 can of 425g Pacific Crown Mackerel in Natural Oil, drained and flaked into bite size pieces
Melt butter in saucepan and sauté celery, bell pepper and garlic.
Stir in water, tomato sauce, and contents of rice mix.
Bring to boil and gently stir in mackerel.
Bring to boil again.
Cover and reduce heat.
Simmer 12 minutes or until liquid has evaporated and rice is tender.
